Under the creative direction of our Bar Chef, Luís Duarte, the 2024 menu pays tribute to the 7 Wonders of the Modern World, reimagined in unique cocktails that promise to take our visitors on a memorable sensory journey. Duarte's mastery is evident in each creation, revealing a new dimension in the art of mixology.
Sustainability is at the heart of our philosophy. We are proud of our commitment to using predominantly local ingredients and adopting sustainable practices, evidenced by our innovative use of kitchen "scraps" to create juices, syrups and infusions. From orange cordial made with peels to grilled pineapple juice prepared with perfectly ripe fruits, each ingredient reflects our commitment to the environment.
